The Hetzner API seems to have changed, breaking the ansible automation and causing issues with the demo platform. The guy working on the demo automation - in his free-time - is trying to fix it as soon as possible. But for the meantime, unfortunately no demo available.
@pkernstock @esackbauer thanks for the response. Is any other documentation available to check the mail cow end points ?

Also, you can just add /api to any accessible mailcow installation to see the Swagger API documentation. For example https://mail.servercow.de/api/.
