I was checking my postfix version and got 3.5.23, which reflects that Mailcow is still based on bullseye images (mailcow/mailcow-dockerizedblob/master/data/Dockerfiles/postfix/Dockerfile) and thus version 3.5.23/24 of postfix ( Debian -- Package Search Results -- postfix

).
As bookworm is current stable - what is the plan to migrate to bookworm? Or are you planning to skip bookworm?

While debian 11 is still supported, there is a huge delta in postfix between debian 11 (3.5) and 12 (3.7), even that not being the most recent version. And rebasing several images might also take some time, you don´t want to do this on the last days of support.
Imho asking for a plan is reasonable.

    If security is a concern, Bullseye is fully supported by the security and release teams until August 15, 2024, and then gets two more years of LTS support. Buster, for example, received the latest security fix for Postfix in December, when it was already on the LTS schedule for 4 months: CVE-2023-51764
