I am strugling to connect on IMAP on port 993. I get a certificate expired error, but when I access via the API it works perfectly and even checking the certificate manually on the URL works fine. Is there another place I need to setup the certificate for IMAP specifically? Seems weird right?

Let me guess, you have a reverse proxy in front of mailcow

Most likely your Traefik is renewing the certs, and securing the https traffic with it.
But IMAP is a different protocol, not handled by Traefik, you need to copy the certs to mailcow as well:
