From man rsync:
--delete : delete extraneous files from dest dirs
There is a reason why there are two warnings that the command will erase anything that may already exist under /var/lib/docker/volumes on the target machine and the migration steps from the docs assume a brand new, empty server.
Better use the backup and restore script if you want to migrate mailcow to an existing server.
