I want to migrate my existing mail solution that is not developed anymore to Mailcow. However, I use an self-maintained mail filter at two providers with Postfix and Rspamd and just want to use Mailcow as the Mailbox server.
Is that possible? What would I need to change for this to work?

Sure, I am also doing this. You need to whitelist your existing servers in mailcow as “forwarding hosts” and via 
postscreen whitelisting. docs.mailcow.email
For outgoing mails you need to set up a “sender dependent transport” and assign this to your mailcow domains.
