I never edited the file myself ever.
I imagined that the file is in gitignore or something … and is expected to be autogenerated at the client end, from extra.cf … because my main.cf is being auto-written to repeatedly from contents of extra.cf (ie, repeated append of the contents of extra.cf … from within the docker container)
So, that may be where the breakage is occuring, but what is responsible for overwriting the main.cf file ? I wonder ?
I will try to recreate the file from the master and see if it gets overwritten again

You are star, man … that was all it was … basically because main.cf was truncated, the container couldn’t find the END file markers it uses to append to the end of the file, and so it repeatedly appended extra.cf …
All sorted now, by:
- Stopped postfix-mailcow and acme-mailcow
- recreated data/conf/postfix/main.cf from github master
- restarted acme and postfix ….
All works fine now … didn’t even need to force a renewal of SSL certs
