I’m seeing the same issue. on Ubuntu 20.04.5 LTS using stable versions with fresh mailcow-dockerized config.
Were you able to solve this?

it looks like a bunch of the volumes in docker-compose.yml are marked as read only, likely for security reasons, however this is causing issues when the containers try to write to those directories.
I changed ro to rw in docker-compose.yml for each of the volumes listed in the error messages, but this did not help.
I tried the nightly builds and had same result.

It looks like there is an issue with how the Ubuntu SNAP install of docker interacts with docker-compose standalone and local file system. The SNAP install runs within a sandbox, see: https://stackoverflow.com/questions/45764477/docker-compose-error-while-creating-mount-source-path

I removed the ubuntu snap docker and installed docker from the official docker repo see: https://docs.docker.com/engine/install/ubuntu/
and was able to get mailcow-dockerized running.
